    The Super Easy, 'Get It Before It's Gone' Italian Pasta Salad

    Today I’m sharing my favorite Italian pasta salad recipe with you. This one is my go-to for any party, no matter the theme. I’ve served it at a BBQ, a pizza party, and an afternoon bridal shower luncheon and it’s a hit each time! My favorite part is how quick it comes together. Enjoy!

    Ingredients:

    • 1 16oz box of rotini noodles

    • 1 cup of cherry tomatoes, halved

    • 1/3 cup red onion, chopped

    • 1 cup cucumber, chopped

    • 1/2 cup green peppers, chopped

    • 1/2 cup frozen peas (do not thaw! Pop them in the salad frozen)

    • 8 oz block of Colby jack cheese cut into 1/2" cubes

    • 3 oz Pepperoni or salami, cut into small 1/2" pieces 

    • 1 can 2.25oz sliced black olives

    • 1 16oz bottle Italian salad dressing

    • Optional - Johnny's Salad Elegance seasoning (about 1 tablespoon, or to taste)

    Instructions:

    1. Boil noodles to package instructions, rinse in cold water & drain well. Set aside

    2. Chop veggies

    3. Cube and slice cheese and pepperoni or salami

    4. Add all ingredients in large serving bowl

    5. Pour 2/3 of the bottle of salad dressing onto salad and mix well

    6. Refrigerate covered (overnight is best, but at least 2 hours)

    7. Right before serving pour the last 1/3 of dressing over salad and mix well

    8. Optional - sprinkle Johnny's Salad Elegence over salad and mix well.

    9. Get it before it's gone! This salad goes fast at our family's parties!
